What you need:

  • 2 tbsp milk
  • 4 tbsp oats
  • 2 cod fillets, fresh
  • 1 tsp oil
  • salt & pepper
  • lemon wedges, to serve

For the salsa:

  • 1 tomato, diced
  • 1/2 avocado, diced
  • 1/2 green bell pepper, diced
  • 1 spring onion, chopped
  • 1 small garlic clove, crushed
  • Tabasco, to taste

What you need to do:

Mix all the salsa ingredients together and set aside. Season the cod fillets with salt and pepper.

Pour the milk into a flat container and dip in the fish. Spread the oats in a separate dish and dip the fish into them, until they are covered on both sides.

Heat the oil in a pan, fry the fish for 3 minutes each side until the batter is crispy and browned, and the fish is cooked.

Serve with a side of the avocado salsa and lemon wedges.
